Proving is the rest that lets dough rise before baking, as yeast produces gas and the dough develops flavour and structure. Here is what is happening and how to get it right.
The most important step in making bread is the one where you do nothing. You mix, you knead, and then you walk away and let the dough sit, apparently idle, under a tea towel. But that quiet hour or two is when the real work happens. The dough swells, softens and fills with flavour, all because of an army of microscopic organisms breathing inside it. This resting and rising stage is called proving, and understanding it is the difference between a light, open loaf and a dense brick.
Proving — also spelt proofing — is the period of rest during which yeast ferments the dough, producing gas that makes it rise before baking. It is, in plain terms, the time you give the dough to inflate.
The engine of proving is yeast, a living single-celled fungus. When dough is warm and moist, the yeast feeds on sugars in the flour and produces carbon dioxide gas as a by-product (along with small amounts of alcohol and acids that add flavour). Those bubbles of gas are caught and held by the dough's stretchy gluten network, the protein structure you build by kneading. As more gas is produced and trapped, the dough expands, lightens and develops the airy, open crumb we expect from good bread.
So two things are happening at once during a prove: the dough is rising (gas inflating it) and it is developing flavour (fermentation producing aromatic compounds). Rush the prove and you sacrifice both.
Think of dough as a balloon factory. Kneading lines up the gluten into an elastic web, full of countless tiny pockets. The yeast then pumps carbon dioxide into those pockets, and because the gluten is both stretchy and strong, it expands without bursting — much as a balloon stretches as you blow it up. When the dough finally hits a hot oven, the gas expands further and the trapped bubbles set into the holey structure of the finished crumb.
This is also why two factors dominate proving: temperature and time.
The counter-intuitive truth is that slower is often better. A long, cool prove gives the yeast and natural enzymes more time to develop deep, complex flavour, which is why many bakers deliberately retard dough in the fridge. A fast, warm prove gives you bread quickly but with a blander taste.
Most yeasted bread recipes ask for two proves, and it helps to know why:
Skipping the second prove leaves dense, heavy bread; rushing the first robs it of flavour. Both matter.
There is no single answer, because proving depends on the amount of yeast, the type of flour, the recipe and, above all, the temperature. As a rough guide, a first rise at normal room temperature often takes one to two hours, and a second rise after shaping is frequently shorter. Enriched doughs heavy with butter, sugar and eggs — think brioche — usually prove more slowly because the fat and sugar slow the yeast down.
Rather than watching the clock, watch the dough. Most recipes describe the goal as the dough having roughly doubled in size and feeling light and airy.

Both extremes cause problems, and knowing the symptoms helps you fix them next time.
A warm spot helps a sluggish rise, but avoid anything too hot — high heat can kill the yeast before baking even begins, much as heat is used deliberately to kill microbes during pasteurisation. A turned-off oven with the light on, or a bowl set over warm water, is plenty.
Baking is full of small bits of science working quietly together, from the structure built during proving to the browning and flavour of the crust, which owe a lot to caramelisation. Even the glaze and enriched doughs lean on understanding fats and liquids, the same territory as emulsification.

Most bread is proved twice, and the golden rule is to judge by the dough, not the clock — the poke test will tell you when it is ready. Keep it warm but not hot, give it time, and remember that a slow, patient prove almost always makes better bread than a rushed one.
